Grate zucchini and squeeze out excess moisture using a clean tea towel.
Combine zucchini, corn, eggs, flour, and feta in a bowl. Season well.
Heat olive oil in a large frypan over medium heat.
Drop heaped tablespoons of batter into the pan and flatten slightly. Cook for 3–4 minutes per side until golden and cooked through.
Serve with a dollop of yoghurt and a simple green salad.
