Heat oil in a large saucepan over medium heat. Sauté onion for 5 minutes until soft.
Add garlic, ginger, turmeric, cumin, and garam masala. Stir for 1 minute until fragrant.
Add lentils, tomatoes, and coconut milk. Stir to combine.
Bring to the boil, then reduce heat and simmer for 20–25 minutes, stirring often, until lentils are completely soft.
Stir in spinach and lemon juice. Season well. Serve over rice with naan.
