    Whisk lime juice, fish sauce, garlic, and half the chilli together for the dressing.

    Brush steak with olive oil and season. Cook in a hot pan 3–4 minutes per side for medium-rare. Rest 5 minutes, then slice thinly.

    Arrange salad leaves, cucumber, tomatoes, and red onion on a platter.

    Top with beef, drizzle dressing, scatter herbs and remaining chilli.
