Heat olive oil in a large pot over medium heat. Cook onion, garlic, and carrot for 5 minutes.
Add cumin and coriander, stir for 1 minute until fragrant.
Add lentils, tomatoes, celery, and stock. Bring to the boil.
Reduce heat and simmer for 25 minutes until lentils are completely soft.
Stir in lemon juice and season well. Add more stock if too thick.
