Heat olive oil in a large, heavy-based saucepan. Brown mince over high heat, breaking up lumps. Set aside.
In the same pan, sauté onion, garlic, and carrot over medium heat for 5 minutes.
Return mince. Add tomato paste, crushed tomatoes, oregano, and bay leaves.
Reduce heat to low, cover partially, and simmer for 45 minutes, stirring occasionally. Season well.
Cook pasta in well-salted boiling water. Toss with sauce and serve.
