Avocado on Sourdough

The Australian classic — smashed avo on thick sourdough toast with a squeeze of lemon, chilli flakes, and a perfectly poached egg on top.

    Toast the sourdough until golden and crisp.

    Halve and pit the avocados. Scoop flesh into a bowl, add lemon juice, season with salt and pepper, and roughly smash with a fork.

    If poaching eggs, bring a saucepan of water to a gentle simmer with the vinegar. Poach eggs for 3 minutes.

    Spoon the smashed avocado onto toast, drizzle with olive oil, scatter chilli flakes, and top with a poached egg if using.
